Pacific Whiting (Merluccius Productus) is harvested in the deeper waters of the California coast, Oregon, Washington, Canadian and Alaskan waters. Often called Hake or Pacific hake, this species of fish has proven through the years to be a desired resource. Whiting is preferably packed frozen h&g (Head off and gutted) for quick freezing and end user convenience, shipped statewide or exported overseas.
Having a mild flavor and medium texture when cooked, it is very versatile which makes this species of fish very useful in many applications. Many of the value added and processed fish products today contain pacific whiting as a filler or a binder for the breaded fish industry.
